To the light greasiness of fried food is well balanced by the creaminess, structure and effervescence of a sparkling wine, well completed by an intense aromatic profile and balsamic scents.
Tout can be paired with dry white wines. Even better if they’re young, vivacious and medium-bodied.
Lavaret fish has very white, soft and delicate flesh. A classic preparation is with butter and sage. The most suitable wines are dry, soft and fragrant white wines such as Lugana or Soave Classico.
