Aged Cheese

Each kind of cheese should be paired with a wine that enhances its flavor but at the same time balances the strongest aromatic notes with the aromaticity and harmony of its own bouquet.

In the case of aged cheese, where the long maturation and hardness give the cheese greater intensity, flavor and persistence, the best choice is a wine of character and well structured, possibly aged and high in alcohol.

There are many suitable wine varieties for aged cheese, as long as they are at least medium-bodied and with some bottle-aging.
